Description
Gildardo Lopez Hoyos is a beautiful single estate coffee of the Pink Bourbon varietal from the iconic region of Huila in Colombia.
It’s one of those amazing coffees that sits nicely between the words ‘accessible’ and ‘complex’, giving you the best of both worlds. By this we mean it’s rich, sweet and moreish, but also offers layers of flavours that give it great complexity for those looking for it.
As an espresso roast, expect a full bodied cup with rich milk chocolate and butterscotch body supported by a layer of pistachio and muted orange blossom like acidity.

The farmer:
Gildardo is one of the newest farmers with whom Osito Colombia has been working and one of the very few new relationships amidst the COVID-19 pandemic.
Gildardo is also the first and only producer with whom we partner in the municipality of Paicol, in western Huila, near the shared border with Cauca. His attention to detail and eye-popping results on the cupping table have brought him deep into the fold of Osito and we’re so excited to work with him.
Processing:
Cherries are harvested when ripe and then floated. Post-sorting the cherries are allowed to ferment for 30hrs prior to de-pulping. Once depulped the parchment is fermented for another 48hrs. Once fermentation and washing is complete, the parchment is dried on raised beds for 20-25 days.
The Varietal – Pink Bourbon:
The Pink Bourbon varietal is extremely rare, and is a mutation of Red and Yellow Bourbon. Research is currently being done to determine its exact place of origin, but is thought to have began at 2100 MASL in San Adolfo, Huila.
It’s attractive to producers partly due to its rarity, and partly due to the fact it’s believed to be more resistant to rust. Pink Bourbon is a difficult varietal to produce and maintain, as the “pink” gene is recessive to the dominant presence of yellow and red genes. In order to preserve the unique colour and character of this variety, each lot must be carefully isolated and contained. Marvellously, this micro-lot is 100% Pink Bourbon.
——- Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point of 10-36 days). We recommend letting this coffee rest for at least 12 days before using.
